Weight Watchers Cupcake Recipes

Do you crave chocolate?  How about the texture of cake?  I am a HUGE lover of cake. I don't care about the frosting (one of the few "bad" foods I don't want to eat, lol) though and just make cake sometimes.  Of course when I am on the Weight Watchers program it is important to find some alternate Weight Watchers recipes for sweet treats.  The myWW Points for sweets is HIGH and I could eat my entire points for the day in a sitting if I am not careful.  So I found a delicious solution for when I get a chocolate cake craving.  These Weight Watchers Chocolate Cupcakes are only 4 myWW Points each and you won't miss the fat and calories!!

What is better than a recipe that only calls for 3 ingredients?  Practically nothing, right?  Except maybe a recipe that only has 2 ingredients like my 2 Ingredient Lemon Bars!  I love low ingredient recipes because they are saving me time and money.  I also love that these cupcakes aren't too dense.  Some recipes that are lower calorie end up being very, very dense and don't remind me of real cake.  These cupcakes don't look exactly like regular, full-fat cupcakes, BUT they taste the same.  They are moist and springy and not super dense!  Score!!!

Ingredients Needed for Weight Watchers Chocolate Cupcakes

1 Box of Betty Crocker Devil's Food Cake Mix–UNPREPARED

1 15 ounce can of pumpkin

1/4 cup water

1-2 teaspoons of powdered sugar (optional)

How to Make Weight Watchers Chocolate Cupcakes

Preheat your oven to 350 degrees F.

Take your cake mix and put it into your mixing bowl.  Don't bother looking at the directions on the package because you won't be following them unless you want a cupcake that is super HIGH in points!

Add your can of pumpkin and the water.  Combine these ingredients and mix well. My KitchenAid mixed this up in no time!

Spoon mixture into regular sized cupcake pan that has been sprayed with nonstick cooking spray or has cupcake liners. You can also use an amazing silicone cupcake baking pan for sweet results!

You want to make 24 cupcakes which is what the package says it should make.  I spooned enough mixture into the cupcake holes to fill it not quite half way.  That allowed me to make 24 cupcakes.  If you want to make less you will need to adjust the points.

Bake in the oven for 14-17 minutes or until done in the center.  My oven took about 16 minutes.

I sprinkled a tiny bit of powdered sugar on top with my little kitchen sifter.  I doubt it is even enough points to worry about.  This is optional!  Now if you add some kind of frosting that will add more points!!

One option would be to add some fat-free cool whip to the top if you want it to feel like it is frosted.

'You can transform your sofa by layering in new cushions –it's the ultimate easy update,' says Sarah Keady, House Beautiful's Style Director. 'Mix different texture and fabrics together with accessories to add interest to your sofa and keep it all super tactile.'
